The biggest practical point is that both sides offer the same eight launch classes. You are therefore not choosing a faction because one has better access to a specific class. Instead, you should focus on which starting region, story perspective, visual atmosphere, and player community sounds more appealing. Another important consideration is that your home server is tied to your faction, making the decision relevant beyond the opening quests. Players who prefer bright surroundings may naturally gravitate toward Elyos, while those who like darker and more rugged settings may prefer Asmodians.
